Honey glazed jamon, compressed melon, frizzy and black olive puree
Australian king prawn, lobster, truffle aioli, parsnip crisps, salsa verde
Tempura zuchini flower stuffed with goats cheese, petite bouche salad, 
mango salsa
Cream of celeriac soup with house smoked salmon
 
Mains
 
Slow cooked turkey tenderloin, roast pumpkin, brussel sprouts, 
fig stuffing and a herb sauce
Pan roasted trout, herb potato, sautéed baby spinach, sorrel cream sauce
Beef tenderloin with roesti potato, glazed heirloom carrot, wild mushroom jus
Tempura seasonal vegetable, crispy ecshallot, wasabi mayonnaise, baby coriander leaves

Warm brioche with plums poached in spiced red wine and blackberry yoghurt sorbet
Verjuice poached pear and apple lime labneh and a praline wafer
Traditional Christmas pudding, brandy sauce and macerated fruits
Fresh raspberry and vanilla bean cream tartlet with bitter chocolate ice cream and sweet yoghurt cheese
